Ingredients
  

  • 1 cup acini di pepe pasta
  • 1 20 oz can crushed pineapple, drained
  • 1 11 oz can mandarin oranges, drained
  • 1 cup miniature marshmallows
  • 1/2 cup shredded coconut
  • 1/4 cup chopped pecans optional
  • 1 cup heavy whipping cream whipped
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese softened
  • Maraschino cherries halved (for garnish)

Instructions
 

Step 1: Cook the Pasta

  • Bring a medium saucepan of water to a boil. Add the acini di pepe pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process, ensuring the pasta is firm and chewy.

Step 2: Prepare the Creamy Dressing

  • In a large mixing bowl, beat the softened cream cheese with sugar and vanilla until smooth. Gently fold in the whipped cream until fully incorporated, creating a light and fluffy dressing that coats every ingredient.

Step 3: Combine the Salad Ingredients

  • Add the drained pineapple, mandarin oranges, miniature marshmallows, and shredded coconut to the bowl with the dressing. Fold in the cooled pasta gently, making sure all the ingredients are evenly coated without deflating the whipped cream.

Step 4: Chill the Salad
