For the Meat Sauce:
- 2 pounds ground beef
- 1 medium onion finely chopped
- 4 cloves garlic minced
- 1 28-ounce can crushed tomatoes
- 1 6-ounce can tomato paste
- 1 15-ounce can tomato sauce
- 2 teaspoons dried Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes optional
For the Cheese Layer:
- 2 cups cottage cheese or ricotta cheese
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley or 1 teaspoon dried
- 1/2 teaspoon salt
For Assembly:
- 12 lasagna noodles
- 4 cups shredded mozzarella cheese
Step 2: Prepare the Meat Sauce
In a large skillet over medium heat, cook the ground beef until browned. Add chopped onion and cook until soft. Stir in minced garlic and cook for another minute.
Add crushed tomatoes, tomato paste, and tomato sauce. Stir well. Season with Italian seasoning, salt, black pepper, and red pepper flakes. Reduce heat and let simmer for 20–25 minutes. The sauce should thicken slightly and become rich and fragrant.
Step 3: Make the Cheese Mixture
In a mixing bowl, combine cottage cheese or ricotta, eggs, Parmesan cheese, parsley, and salt. Stir until smooth and creamy.
Step 4: Assemble the Lasagna
Preheat oven to 375°F (190°C).
Spread a thin layer of meat sauce on the bottom of your baking dish. Place a layer of noodles on top. Spread one-third of the cheese mixture over the noodles. Add meat sauce, then sprinkle mozzarella. Repeat layers until ingredients are used, finishing with sauce and a generous layer of mozzarella on top.
Step 6: Rest Before Serving
- Always simmer your sauce long enough to reduce excess moisture.
- Do not overcook noodles; they continue cooking in the oven.
- Let it rest before slicing. Patience makes prettier pieces.
- Use whole milk ricotta for richer texture.
