Ingredients
  

For the Peach Filling:

  • 4 cups fresh peaches peeled and sliced (or canned, drained well)
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon

For the Batter:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter melted

Optional Additions:

  • 1 teaspoon vanilla extract
  • Pinch of nutmeg
  • 1 tablespoon brown sugar for topping

Step 1: Preheat the oven

  • Preheat your oven to 180°C (350°F). Place the butter directly into your baking dish and let it melt in the oven for a few minutes.

Step 2: Prepare the peaches

  • In a saucepan, combine the sliced peaches, sugar, lemon juice, and cinnamon. Cook over medium heat for 5–7 minutes until the peaches soften and release their juices. You should see a light syrup forming.

Step 3: Mix the batter

  • In a mixing bowl, whisk together flour, sugar, baking powder, and salt. Add the milk and mix gently until you get a smooth batter. Do not overmix—it should be light.

Step 4: Assemble the cobbler

  • Carefully remove the baking dish with melted butter from the oven. Pour the batter evenly over the butter—do not stir. Then spoon the warm peach mixture over the batter, including the syrup.

Step 5: Bake

  • Bake for 35–40 minutes, or until the top is golden brown and the edges are bubbling with peach syrup.

Step 6: Cool and serve

  • Let the cobbler cool for at least 10–15 minutes before serving. This helps the texture set while keeping it warm and gooey.
