  • 6 cups rye bread cubed
  • 3 cups cooked corned beef chopped or shredded
  • 2 cups sauerkraut well drained

  • 1 cup Thousand Island dressing
  • 1/2 cup mayonnaise
  • 1 teaspoon caraway seeds optional, but adds authentic flavor
  • 2 tablespoons butter melted
  • 1/2 teaspoon black pepper

Optional additions:

  • 1/2 cup shredded mozzarella for extra meltiness
  • 1 tablespoon Dijon mustard for a sharper tang

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 180°C (350°F). Lightly grease your baking dish so nothing sticks and cleanup stays easy.

Step 2: Prepare the Bread Base

  • Spread half of the cubed rye bread evenly across the bottom of the dish. This layer will absorb all the delicious flavors as the casserole bakes.

Step 3: Add the Corned Beef

  • Layer the chopped corned beef over the bread. Try to distribute it evenly so every bite gets that rich, savory goodness.

Step 4: Add Sauerkraut

  • Spread the drained sauerkraut over the corned beef. Make sure it’s well drained—this step is key to avoiding a soggy casserole.

Step 5: Add Cheese Layer

  • Sprinkle the Swiss cheese generously over the sauerkraut. Don’t be shy here—this is where the creamy magic starts.

Step 6: Mix the Dressing

  • In a bowl, combine the Thousand Island dressing, mayonnaise, black pepper, and caraway seeds. Stir until smooth and creamy.
