For the Marinade
- 1/3 cup olive oil
- 1/4 cup soy sauce
- 2 tablespoons Worcestershire sauce
- 3 tablespoons lemon juice
- 4 cloves garlic minced
- 2 tablespoons brown sugar
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
For the Tri Tip
- 2 to 2.5 pounds tri tip roast
- Salt to taste
Step 1: Make the Marinade
In a large bowl, whisk together olive oil, soy sauce, Worcestershire sauce, lemon juice, garlic, brown sugar, black pepper, smoked paprika, rosemary, and thyme.
The smell at this point is incredible—savory, slightly tangy, and warm from the spices.
Step 2: Marinate the Tri Tip
Place the tri tip in a zip-top bag or shallow dish. Pour the marinade over it, making sure every surface is well coated.
Seal and refrigerate for at least 4 hours, but if you have time, let it sit overnight. That’s when the real magic happens.
Step 3: Bring to Room Temperature

Preheat your grill to medium-high heat. If using the oven, preheat to 200°C (400°F).
Remove the meat from the marinade and lightly pat it dry. Season with a bit of salt.
Step 5: Cook the Tri Tip
Place the meat on the grill. Cook for about 30–35 minutes, turning occasionally.
Use a meat thermometer to check doneness:
57°C (135°F) for medium-rare
63°C (145°F) for medium
