Ingredients
  

  • 3 tablespoons soy sauce low-sodium recommended
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or sugar
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon grated garlic
  • 1 teaspoon mirin optional but adds depth
  • 1 tablespoon water to loosen the sauce slightly
  • ½ teaspoon red chili flakes or a few drops of chili oil
  • Optional: ½ teaspoon fish sauce for extra umami
  • Optional: toasted sesame seeds

Instructions
 

Prepare your aromatics.

  • Grate the fresh ginger and garlic using a microplane for the smoothest texture.

Combine liquids.

  • In a small bowl, whisk soy sauce, rice vinegar, sesame oil, and honey.

Add aromatics.

  • Mix in ginger, garlic, mirin, and water.

Adjust heat.

  • Add chili flakes or chili oil to reach your desired spice level.

Taste and balance.

  • Add a touch more honey for sweetness or vinegar for brightness if needed.

Store or use immediately.

  • Pour into a jar and store in the fridge for up to one week.
