Ingredients
  

For the Apple Filling:

  • 3 medium Granny Smith apples peeled, cored, and diced
  • 3 tbsp unsalted butter
  • cup brown sugar
  • 2 tbsp granulated sugar
  • tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp all-purpose flour to make it thicker
  • 1 tsp lemon juice
  • ½ tsp vanilla extract
  • Pinch of salt

For the Crust:

  • 2 sheets refrigerated pie crust or puff pastry
  • 1 large egg beaten, for egg wash

For Frying:

  • Vegetable oil enough to fill your fryer or skillet halfway

For Coating:

  • ¼ cup granulated sugar
  • ½ tsp ground cinnamon

Instructions
 

Step 1: Preparing the Apple Filling

  • Melt butter on medium heat in a medium saucepan. Add the diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, flour, lemon juice, vanilla, and salt.
  • Simmer for 5-6 minutes, until the apples are slightly softened and the mixture is sticky and syrupy. You would have the apples soft and not mushy. Removed it from the heat and left it to cool in the room.

Step 2: Cut and Fill the Pastry

  • Measure out a small surface covered with flour to create your pie crust or puff pastry. Prepare pieces approximately 4x6 inches in shape, and you must have 6 or 8 pieces, depending on the quantity of dough.
  • Insert a spoonful of apple stuffing in the center of each of the rectangles, and half an inch of space on each side. Oil the sides with beaten egg, and place on a pastry.
  • Seal the sides with a fork- this will prevent all the sweet sticky stuff in its place.

Step 3: Chill the Pies

  • Put the ready pies in a baking tray and refrigerate them, and allow them to rest for at least 20 minutes. This helps in making the dough stronger and is less likely to pop off in the course of frying.

Step 4: Fry Until Golden

  • Fry warm oil in a deep pan or fryer up to 350 °C (175 o C). Take an extremely thin-sliced piece of pie and drop it into hot oil, and fry both sides of the piece 2-3 minutes in the oil until it becomes nice, golden brown, and crispy.
  • Using a slotted spoon, take away and leave to dry on paper towels for at least one minute.

Step 5: Top Cinnamon Sugar.

  • The pies are hot; therefore, at this stage, add granulated sugar and cinnamon to a bowl. Heavily sprinkle or sprinkle all the pies of the mixture uniformly.
