For the crust:
- 1½ cups graham cracker crumbs
- ⅓ cup granulated sugar
- 6 tablespoons unsalted butter melted
For the filling:
- 1 can 14 ounces sweetened condensed milk
- 4 large egg yolks
- ½ cup key lime juice fresh or bottled
- 1 tablespoon key lime zest
For topping (optional):
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- Extra lime zest or slices for garnish
Preheat your oven to 350°F (175°C).
In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs resemble wet sand.
Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
Bake the crust for 8–10 minutes, then remove and let cool slightly.
In a separate bowl, whisk together sweetened condensed milk and egg yolks until smooth.
Add key lime juice and zest, whisking until fully combined and slightly thickened.
Pour the filling into the warm crust and smooth the top.
Bake for 15–17 minutes, just until the center is set but still slightly jiggly.
Remove from oven and cool at room temperature, then refrigerate for at least 4 hours.
Before serving, whip the heavy cream with powdered sugar until soft peaks form and spread over the pie if desired.
