Ingredients
  

For the Black Beans

  • 2 cans black beans 15 oz each, undrained for best flavor
  • 1 tablespoon olive oil
  • 1 small onion finely diced
  • 3 garlic cloves minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1 bay leaf
  • 1/2 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1/4 cup water or vegetable broth only if needed

Optional flavor boosters:

  • 1 teaspoon minced chipotle peppers in adobo for smoky heat
  • A pinch of red pepper flakes for spice
  • 2 tablespoons chopped cilantro for freshness

Instructions
 

Start by softening the onions

  • Warm your pot over medium heat, add the olive oil, and toss in the diced onions. Stir and let them cook for 3–4 minutes until they turn soft and translucent. This step forms the aromatic base and gives your beans a mellow sweetness.

Add garlic and dry spices

  • Add the minced garlic and cook for 30 seconds until fragrant. Then sprinkle in cumin, oregano, smoked paprika, salt, and black pepper. Stir to coat the onions and wake up all those warm spices—it smells incredible already.

Pour in the beans

  • Add both cans of black beans with their liquid. This is important. That liquid contains so much flavor and helps the beans get silky and thick. Give everything a gentle stir.

Add bay leaf and simmer

  • Drop in the bay leaf, reduce the heat to low, and let the beans simmer for 15–20 minutes. Stir occasionally so the bottom doesn’t stick. If the mixture gets too thick, add a splash of water or vegetable broth.

Finish with lime

  • When the beans taste rich and the flavors have blended beautifully, turn off the heat and stir in the lime juice. This brightens everything and gives your beans that restaurant-style freshness.

Adjust seasoning

Remove bay leaf and serve
