Ingredients
  

For the Roasted Strawberries

  • 2 cups fresh strawberries hulled and halved
  • 1 ½ tablespoons honey
  • 1 teaspoon olive oil
  • ½ teaspoon vanilla extract
  • Pinch of salt

For the Whipped Ricotta

  • 1 cup whole milk ricotta cheese
  • 1 tablespoon honey
  • 1 teaspoon lemon zest
  • ½ teaspoon vanilla extract

For the Toast

  • 4 thick slices sourdough bread
  • 1 tablespoon butter or olive oil

Optional Toppings

  • Extra honey drizzle
  • Fresh basil leaves
  • Lemon zest
  • Crushed pistachios

Instructions
 

Step 1: Prepare the oven

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent the strawberries from sticking.

Step 2: Roast the strawberries

  • Place the halved strawberries on the baking sheet. Drizzle them with honey and olive oil. Add vanilla extract and a tiny pinch of salt.
  • Gently toss everything together so the berries are lightly coated.
  • Spread them into a single layer and roast for about 18–20 minutes until the strawberries soften and release their juices.
  • The syrup that forms on the tray is liquid gold—don't waste it.

Step 3: Make the whipped ricotta

  • While the strawberries roast, place ricotta, honey, vanilla extract, and lemon zest into a blender or food processor.
  • Blend for about 30–45 seconds until smooth, fluffy, and creamy.
  • If you don't have a blender, whisking vigorously for a minute works too.

Step 4: Toast the bread

  • Toast the sourdough slices until golden and crisp. You can toast them in a toaster, oven, or skillet with a little butter.
  • The toast should be sturdy enough to hold the toppings.

Step 5: Assemble the toast

  • Spread a generous layer of whipped ricotta over each slice of toast.
  • Top with roasted strawberries and spoon a little of the roasting syrup over the top.

Step 6: Add finishing touches

  • Drizzle with extra honey if desired and sprinkle with lemon zest or crushed pistachios.
  • Serve immediately while the toast is still warm.
