Ingredients
  

For the Roll-Ups

  • 8 slices white sandwich bread crusts removed
  • 8 breakfast sausage links
  • 2 large eggs
  • 1/3 cup milk
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Butter for cooking

For the Coating (Optional but Amazing)

  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon

For Serving

  • Maple syrup
  • Powdered sugar
  • Fresh fruit optional

Instructions
 

Step 1: Cook the Sausage

  • Cook sausage links according to package directions until fully cooked. Set aside to cool slightly.

Step 2: Prep the Bread

  • Remove crusts from the bread. Use a rolling pin to flatten each slice until thin and flexible.

Step 3: Roll It Up

  • Place one sausage link at the edge of each bread slice. Roll tightly and set seam-side down.

Step 4: Make the French Toast Batter

  • In a bowl, whisk together eggs, milk, cinnamon, vanilla, and salt.

Step 5: Dip and Cook

  • Dip each roll-up into the egg mixture, coating all sides. Heat butter in a skillet over medium heat and cook roll-ups until golden on all sides.

Step 6: Add Cinnamon Sugar

  • While still warm, roll in cinnamon sugar if using.
  • Serve immediately with warm maple syrup.
