Ingredients
  

For the Ground Beef

  • 1 lb 450 g ground beef
  • 1 tablespoon olive oil
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water

For the Nachos

  • 12 oz 340 g tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup canned black beans drained
  • 1 cup corn kernels
  • 1 jalapeño thinly sliced

Toppings

  • 1 cup diced tomatoes
  • 1 avocado diced
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • 1/4 cup sliced green onions
  • Lime wedges for serving

Instructions
 

Step 1: Prepare the Beef

  • Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for about 3–4 minutes until it becomes soft and slightly translucent.
  • Add the minced garlic and cook for another minute until fragrant.
  • Now add the ground beef. Break it apart with a wooden spoon and cook until browned, about 5–6 minutes.

Step 2: Season the Meat

  • Once the beef is browned, stir in the tomato paste, chili powder, cumin, smoked paprika, salt, and pepper.
  • Pour in the water and let everything simmer for about 3 minutes. This helps the spices coat the meat evenly and keeps the beef juicy.

Step 3: Preheat the Oven

  • Preheat your oven to 400°F (200°C) while you assemble the nachos.

Step 4: Build the Nachos

  • Spread tortilla chips evenly across a large sheet pan. Try to avoid stacking too many chips on top of each other.
  • Spoon the seasoned beef across the chips. Then sprinkle the shredded cheddar and Monterey Jack cheese evenly over the tray.
  • Add black beans, corn, and jalapeño slices.

Step 5: Bake

  • Place the tray in the oven and bake for 8–10 minutes, just until the cheese is melted and bubbly.

Step 6: Add Fresh Toppings

  • Remove the tray from the oven and immediately top with diced tomatoes, avocado, cilantro, green onions, and dollops of sour cream.
  • Serve with lime wedges.

Notes

  • Use thick tortilla chips so they don't break under toppings.
  • Don't overcrowd the pan.
  • Bake just until cheese melts.
  • Add fresh toppings after baking.
