For the Ground Beef
- 1 lb 450 g ground beef
- 1 tablespoon olive oil
- 1 small onion finely diced
- 3 cloves garlic minced
- 1 tablespoon tomato paste
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water
For the Nachos
- 12 oz 340 g tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup canned black beans drained
- 1 cup corn kernels
- 1 jalapeño thinly sliced
Toppings
- 1 cup diced tomatoes
- 1 avocado diced
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- 1/4 cup sliced green onions
- Lime wedges for serving
Step 1: Prepare the Beef
Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for about 3–4 minutes until it becomes soft and slightly translucent.
Add the minced garlic and cook for another minute until fragrant.
Now add the ground beef. Break it apart with a wooden spoon and cook until browned, about 5–6 minutes.
Step 2: Season the Meat
Once the beef is browned, stir in the tomato paste, chili powder, cumin, smoked paprika, salt, and pepper.
Pour in the water and let everything simmer for about 3 minutes. This helps the spices coat the meat evenly and keeps the beef juicy.
Step 4: Build the Nachos
Spread tortilla chips evenly across a large sheet pan. Try to avoid stacking too many chips on top of each other.
Spoon the seasoned beef across the chips. Then sprinkle the shredded cheddar and Monterey Jack cheese evenly over the tray.
Add black beans, corn, and jalapeño slices.
Step 6: Add Fresh Toppings
Remove the tray from the oven and immediately top with diced tomatoes, avocado, cilantro, green onions, and dollops of sour cream.
Serve with lime wedges.
