Ingredients
  

For the Chicken

  • 4 bone-in or boneless chicken thighs or breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 tablespoons oil

For the Gravy

  • 1 large onion thinly sliced
  • 3 cloves garlic minced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups chicken broth
  • 1/2 teaspoon thyme
  • 1/2 teaspoon onion powder

For the Rice

  • 1 1/2 cups white rice
  • 3 cups water or chicken broth
  • Salt to taste

Instructions
 

  • Season chicken on both sides with salt, pepper, garlic powder, and paprika.
  • Heat oil in a large skillet over medium heat.
  • Brown chicken on both sides until golden. Remove and set aside.
  • Add butter to the same skillet.
  • Add onions and cook until soft and lightly caramelized.
  • Stir in garlic and cook for 30 seconds.
  • Sprinkle flour over onions and stir well.
  • Slowly pour in chicken broth while stirring.
  • Add thyme and onion powder.
  • Return chicken to skillet.
  • Cover and simmer 25–30 minutes until chicken is tender.
  • Meanwhile, cook rice according to package instructions.
  • Serve chicken and gravy over rice.
