Ingredients
  

Dough

  • 1 cup active sourdough starter
  • 3 cups all-purpose flour
  • 1 cup warm water
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter melted

Baking Soda Bath

  • 6 cups water
  • 2 tablespoons baking soda

Topping

  • 1 egg beaten
  • 1 tablespoon water
  • Coarse pretzel salt

Optional dips:

  • Cheese sauce
  • Honey mustard
  • Spicy mustard

Instructions
 

Step 1: Mix the Dough

  • In a large mixing bowl, combine the sourdough starter, warm water, and brown sugar. Stir until the mixture looks smooth.
  • Add the flour, salt, and melted butter. Mix until a soft dough forms.

Step 2: Knead the Dough

  • Turn the dough onto a lightly floured surface and knead for about 8 minutes until it becomes smooth and elastic.
  • If using a stand mixer, knead with a dough hook for about 5 minutes.

Step 3: Let the Dough Rise

  • Place the dough in a lightly greased bowl. Cover with a kitchen towel and let it rest for about 2 hours until slightly puffy.

Step 4: Shape the Dough

  • Transfer the dough to your work surface and divide it into several pieces. Roll each piece into long ropes about 1 inch thick.
  • Cut the ropes into small bite‑sized pieces.

Step 5: Prepare the Baking Soda Bath

  • Bring 6 cups of water to a gentle boil in a large pot. Add the baking soda carefully.

Step 6: Boil the Pretzel Bites

  • Drop the dough pieces into the boiling water for about 20 seconds. Remove them with a slotted spoon and place them on a parchment‑lined baking sheet.

Step 7: Add Egg Wash

  • Whisk the egg with 1 tablespoon of water. Brush this mixture over the pretzel bites.

Step 8: Add Salt

  • Sprinkle coarse pretzel salt on top of each bite.

Step 9: Bake

  • Bake in a preheated oven at 425°F (220°C) for about 12–15 minutes until the pretzel bites turn deep golden brown.

Step 10: Cool and Serve

  • Allow them to cool slightly before serving. Enjoy them warm with your favorite dipping sauce.
