- 2 11-ounce cans shoe peg corn, drained well
- 1 cup red bell pepper finely diced
- 1/2 cup green bell pepper finely diced
- 1/2 cup red onion finely chopped
- 1/2 cup celery finely diced
- 1 cup shredded sharp cheddar cheese
- 3/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons apple cider vinegar
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley optional, for garnish
Step 2: Chop the Vegetables
Step 3: Mix the Salad Base
In a large mixing bowl, combine the drained corn, bell peppers, red onion, celery, and shredded cheddar cheese. Gently toss everything together.
Step 4: Make the Dressing
In a separate bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, salt, and black pepper. Taste it. It should be slightly sweet and lightly tangy. Adjust salt if needed.
