Ingredients
  

For the Garlic Bread Bowl

  • 1 large round loaf Italian, sourdough, or any crusty artisan bread
  • 5 tablespoons unsalted butter melted
  • 4 cloves garlic minced
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili flakes optional for heat
  • ½ cup shredded mozzarella for lining the bowl
  • ¼ cup grated parmesan

For the Spaghetti

  • 10 ounces spaghetti
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 can 14 ounces crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar to balance acidity
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • ½ cup pasta water for thickening and binding
  • 1 cup shredded mozzarella
  • ¼ cup parmesan
  • Fresh basil for garnish optional

Instructions
 

Prep the Bread Bowl

  • Preheat your oven to 375°F.
  • Using a sharp knife, slice the top off the bread loaf (just enough to create an opening).
  • Scoop out the inside, leaving about 1 inch of bread lining the bowl.
  • Mix melted butter with garlic, parsley, oregano, salt, pepper, and chili flakes.
  • Brush this mixture generously inside and outside the bread bowl.
  • Sprinkle mozzarella and parmesan inside the bowl to create a “cheese shield.”
  • Place the loaf on a baking tray and bake for 10 minutes. This helps it hold the spaghetti later.

Make the Spaghetti

  • Boil spaghetti according to package instructions, leaving it slightly firm.
  • In a saucepan, heat olive oil and sauté onion until soft.
  • Add garlic and cook until fragrant.
  • Stir in crushed tomatoes, tomato paste, sugar, basil, oregano, salt, and pepper.
  • Simmer on low for 10 minutes, adding pasta water as needed for thickness.
  • Toss spaghetti in the sauce and mix in mozzarella and parmesan.
  • Let the cheese melt into the noodles until it gets creamy and velvety.

Fill the Bread Bowl

  • Remove the toasted bread bowl from the oven.
  • Scoop the spaghetti inside, loading it generously.
  • Sprinkle extra cheese on top.
  • Bake again for 10–12 minutes until the edges of the bread turn golden and the cheese on top bubbles.

Serve

  • Let it cool for 5 minutes so the bread firms up.
  • Then slice it like a cake, or dig straight in with a fork. Trust me, no one will judge.
