Ingredients
  

  • 1 cup fresh lemon juice about 4–5 lemons
  • cups pineapple juice fresh or high‑quality store bought
  • ½ cup granulated sugar or honey
  • 2 cups cold sparkling water
  • 1 cup cold water
  • 1 cup fresh pineapple chunks
  • Ice cubes
  • Lemon slices for garnish
  • Pineapple wedges for garnish
  • Fresh mint leaves optional

Instructions
 

Step 1: Prepare the Pineapple

  • If you are using fresh pineapple, place the pineapple chunks in a blender and blend until smooth. Strain the mixture through a fine mesh sieve to get fresh pineapple juice.

Step 2: Juice the Lemons

  • Cut the lemons in half and squeeze them using a citrus juicer. Remove seeds and measure one cup of fresh lemon juice.

Step 3: Make Simple Syrup

  • In a small saucepan, combine sugar and 1 cup water. Heat gently and stir until the sugar dissolves completely. Let it cool slightly.

Step 4: Mix the Lemonade Base

  • In a large pitcher combine the fresh lemon juice, pineapple juice, and simple syrup. Stir well so the flavors blend evenly.

Step 5: Add Sparkle

  • Just before serving, pour in the chilled sparkling water. Stir gently to keep the bubbles lively.

Step 6: Serve

  • Fill glasses with ice cubes. Pour the sparkling pineapple lemonade over the ice and garnish with lemon slices, pineapple wedges, and fresh mint.
