Turn ordinary burgers into something special with Spicy Dill Pickle Burger Sauce made from mayo, pickle juice, Dijon, and smoky spices.

Ingredients
  

  • 1 cup full-fat mayonnaise
  • 1/3 cup finely chopped dill pickles
  • 1 tablespoon pickle juice from the jar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon hot sauce adjust to taste
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon crushed red chili flakes
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of salt if needed
  • Optional: 1 teaspoon fresh chopped dill for extra brightness

Instructions
 

Step 1: Chop the Pickles

  • Place your dill pickles on a cutting board and chop them very finely. You want small pieces so they mix smoothly into the sauce. Tiny bits give flavor in every bite without making it chunky.

Step 2: Build the Creamy Base

  • In a medium bowl, add the mayonnaise and Dijon mustard. Stir until smooth. This creates the rich foundation of the sauce.

Step 3: Add the Tang

  • Pour in the pickle juice. This is my favorite part because it instantly brightens the mixture. Stir well so it blends completely.

Step 4: Add the Spices

  • Sprinkle in smoked paprika, garlic powder, onion powder, red chili flakes, and black pepper. Add the hot sauce. Mix thoroughly until everything is evenly combined.

Step 5: Fold in the Pickles

  • Add the finely chopped pickles and gently fold them into the sauce. Make sure they are evenly distributed.

Step 6: Taste and Adjust

  • Taste the sauce. Want more heat? Add a drop more hot sauce. Need more tang? A splash of pickle juice will do it. Adjust salt only if necessary.

Step 7: Chill (Optional but Recommended)

  • For best flavor, cover the bowl and refrigerate for at least 30 minutes. This resting time allows the spices to blend beautifully.

Notes

  • Use full-fat mayonnaise for the richest texture. Light mayo can taste thin.
  • Chop pickles very fine for smooth spreading.
  • Let the sauce rest in the fridge before serving. It truly tastes better after chilling.
  • Taste as you go. Your heat tolerance may be different from mine.
