Ingredients
  

  • 8 oz cream cheese softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries finely chopped
  • 12 eggroll wrappers
  • 1 egg for sealing
  • 2 cups vegetable oil for frying
  • 1/4 cup powdered sugar for dusting

Instructions
 

Step 1: Make the Cheesecake Filling

  • In a medium mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy. The mixture should be fluffy and free of lumps.

Step 2: Add the Strawberries

  • Gently fold the chopped strawberries into the cheesecake mixture. The filling should look creamy with small bursts of bright red fruit throughout.

Step 3: Prepare the Eggroll Wrappers

  • Lay one eggroll wrapper on a clean surface in a diamond shape. Spoon about 2 tablespoons of the cheesecake filling into the center.

Step 4: Roll the Eggrolls

  • Fold the bottom corner over the filling, then fold in the sides and roll tightly toward the top corner. Brush the edge with beaten egg to seal.

Step 5: Heat the Oil

  • Pour vegetable oil into a deep skillet and heat to 350°F (175°C). The oil should shimmer slightly when ready.

Step 6: Fry Until Golden

  • Carefully place the eggrolls into the hot oil and fry for 2–3 minutes, turning occasionally until they become golden brown and crisp.

Step 7: Drain and Cool

  • Remove the eggrolls with tongs and place them on a paper towel lined plate to drain excess oil.

Step 8: Dust and Serve

  • Sprinkle powdered sugar over the warm eggrolls and serve immediately for the best texture and flavor.

Notes

  • Make sure the cream cheese is fully softened for a smooth filling
  • Do not overfill the wrappers or they may burst while frying
  • Seal the edges well to prevent leaking
  • Fry in small batches so the oil temperature stays consistent
