Ingredients
  

For the Chicken

  • 500 g boneless chicken thighs cut into bite‑size pieces
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil

For the Sweet and Spicy Sauce

  • 3 tablespoons sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili garlic sauce
  • 3 cloves garlic minced
  • 1 teaspoon grated ginger
  • 1 teaspoon sesame oil

Optional Garnish

  • 2 tablespoons chopped green onions
  • 1 teaspoon sesame seeds
  • Fresh lime wedges

Instructions
 

Step 1: Prepare the chicken

  • Place the chicken pieces in a bowl. Add cornstarch, salt, and black pepper. Toss everything until the chicken is evenly coated.
  • The cornstarch helps create a light crisp texture on the outside while keeping the inside juicy.

Step 2: Mix the sauce

  • In a small bowl, whisk together sweet chili sauce, soy sauce, honey, brown sugar, rice vinegar, chili garlic sauce, minced garlic, ginger, and sesame oil.
  • Set the sauce aside so it is ready when the chicken finishes cooking.

Step 3: Cook the chicken

  • Heat vegetable oil in a large skillet over medium‑high heat. Add the chicken pieces in a single layer.
  • Cook for about 5–6 minutes, turning occasionally, until the chicken becomes golden brown and fully cooked.

Step 4: Add the sauce

  • Reduce heat slightly and pour the prepared sauce into the pan. Stir gently so every piece of chicken becomes coated.
  • The sauce will start bubbling and thickening almost immediately.

Step 5: Simmer briefly

  • Let the chicken cook in the sauce for 3–4 minutes. The sauce should become glossy and slightly sticky.

Step 6: Garnish and serve

  • Turn off the heat and sprinkle chopped green onions and sesame seeds on top.
  • Serve hot with steamed jasmine rice.
