Ingredients
  

For the Chicken Marinade

  • 1 1/2 pounds boneless skinless chicken thighs or breasts
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Optional Add-Ins (Very Cantina-Style)

  • 1 tablespoon apple cider vinegar
  • 1 tablespoon orange juice

Instructions
 

Step 1: Marinate the Chicken

  • In a bowl, whisk together olive oil, lime juice, spices, and seasonings. Add chicken and toss until fully coated. Let marinate for at least 30 minutes, or up to 8 hours.

Step 2: Cook the Chicken

  • Heat a skillet over medium heat. Add the chicken and cook for 6–8 minutes per side until golden and cooked through.

Step 3: Rest and Slice

  • Remove from heat and let rest for 5 minutes. Slice or chop into bite-sized pieces.
