Ingredients
  

Base Ingredients

  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced

Tomato and Flavor

  • 1 can diced tomatoes 14.5 oz
  • 1 tablespoon tomato paste
  • 1 to 2 tablespoons white vinegar
  • 1 teaspoon sugar

Spices

  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon oregano
  • 1/4 teaspoon black pepper
  • Salt to taste

Heat

  • 1 jalapeno finely chopped (optional)
  • Red pepper flakes optional

Instructions
 

  • Heat olive oil in a saucepan over medium heat.
  • Add chopped onion and cook until soft and translucent.
  • Add garlic and cook for 30 seconds until fragrant.
  • Stir in diced tomatoes and tomato paste.
  • Add vinegar, sugar, spices, and jalapeno if using.
  • Simmer uncovered for 15 to 20 minutes, stirring occasionally.
  • Blend until smooth or leave slightly chunky, depending on preference.
  • Taste and adjust salt, vinegar, or heat.
  • Simmer another 5 minutes if needed.
  • Serve warm or store for later.
