Equipment

  • A blender or a food processor
  • Measuring cups and spoons.
  • A whisk (if mixing by hand)
  • A storing container, e.g., a mason jar or a bottle.

Ingredients

  • ½ cup mayonnaise
  • ¼ cup olive oil
  • 3 tablespoons white vinegar
  • 1 tablespoon lemon juice
  • 2 tablespoons grated parmesan cheese
  • 2 garlic cloves minced
  • 2 teaspoons sugar
  • 1 teaspoon Italian seasoning oregano, basil, thyme
  • ½ teaspoon dried parsley
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch red pepper flakes optional

Instructions

  • Prepare the base: Add the mayonnaise, olive oil, vinegar, and lemon juice in a blender or food processor and mix them until smooth and emulsified.
  • Add flavor: Add parmesan, garlic, sugar, Italian seasoning, parsley, salt, and pepper. Blend again until creamy.
  • Taste test: Add, remove, or change according to your preference- add more vinegar, more sugar, or more garlic depending on how much you like a punch.
  • Chill: Place in a jar, cover, and refrigerate at least 1 hour before serving. This enables the flavors to blend.
  • Dress: pour over fresh salad greens in large amounts, apply as a breadstick dipping sauce, or even a marinade to chicken.
