Ingredients
  

  • 1 lb boneless skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cans white beans cannellini or great northern, drained and rinsed
  • 1 can green chilies
  • 4 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 4 oz cream cheese or 1/2 cup heavy cream
  • Optional: corn jalapeno, lime juice

Instructions
 

Step 1: Cook the Onion and Garlic

  • Heat olive oil in a large pot over medium heat. Add chopped onion and cook until soft and slightly golden. Stir in garlic and cook until fragrant.

Step 2: Add the Spices

  • Sprinkle in cumin, chili powder, oregano, paprika, salt, and pepper. Stir well and let the spices bloom for about 30 seconds. This step builds deep flavor.

Step 3: Add Chicken and Broth

  • Place the chicken into the pot and pour in chicken broth. Bring everything to a gentle simmer.

Step 4: Add Beans and Chilies
