Equipment

  • Medium saucepan
  • Whisk
  • Wooden spoon
  • Measuring cups and spoons.
  • Heat-resistant jar/bottle

Ingredients

  • 1 ½ cups ketchup
  • ½ cup apple cider vinegar
  • ½ cup brown sugar packed
  • ¼ cup molasses
  • 2 Tbs Worcestershire sauce.
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1/2 teaspoon cayenne pepper to taste
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons salt-free butter.
  • 1/4 water to alter consistency, as may be required
  • Garnish with a splash of bourbon or espresso - optional extra depth!

Instructions

Step 1: Start the Base

  • Add the ketchup, vinegar, brown sugar, and molasses to a medium-sized saucepan. Cook them on medium heat until they start to mix into a glossy, rich base.

Step 2: Add the Layers of Flavor

  • Add Worcestershire sauce, Dijon mustard, garlic powder, onion powder, paprika, cayenne, salt, and black pepper.

Step 3: Simmer to Perfection

  • Turn the heat to low and allow it to simmer over a period of approximately 15 to 20 minutes. Shake now and then - it will begin to thicken and turn a characteristic BBQ color.

Step 4: Finish with Butter

  • Add butter at the very end till creamy and better flavored.

Step 5: Taste and Adjust

  • taste it--do you think it needs more vinegar, add another dash of it; or more brown sugar, another tablespoon of it.

Step 6: Cool and Store

  • Allow to cool and pour into a jar/bottle. Keep in the fridge not more than 2 weeks (it never takes that long in my house!).
