Ingredients

  • 4 white fish fillets cod, tilapia, haddock, or halibut
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 3 cloves garlic minced
  • Juice of 1 fresh lemon
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley chopped
  • Optional: pinch of red pepper flakes

Instructions

Step 1: Prepare the Fish

  • Pat the fish fillets dry with paper towels. Season both sides generously with salt and black pepper.

Step 2: Sear the Fish

  • Heat olive oil in a large skillet over medium heat. Place the fillets in the pan and cook for 3–4 minutes per side, depending on thickness, until golden and flaky. Remove from the pan and set aside.

Step 3: Make the Lemon Butter Sauce

  • In the same skillet, reduce heat slightly and add butter. Once melted, stir in minced garlic and sauté for about 30 seconds until fragrant. Add lemon juice, lemon zest, and a pinch of red pepper flakes if using.

Step 4: Combine

  • Return the fish to the skillet and spoon the lemon butter sauce over the fillets. Let simmer for 1–2 minutes so the flavors meld together.

Step 5: Garnish and Serve

  • Sprinkle with freshly chopped parsley and serve immediately.

Notes

  • Don’t overcrowd the pan — cook in batches if needed.
  • Pat the fish dry to help it sear properly.
  • Use fresh lemon juice for the brightest flavor.
  • Fish is done when it flakes easily with a fork.
