This Alabama Hot Pockets Recipe is an easy, crowd-pleasing dish that combines hearty filling with buttery pastry.

Equipment

  • One big skillet to cook the filling in.
  • A coated baking sheet with parchment paper.
  • A rolling pin (when you make your own dough)
  • A pastry brush (for egg wash)
  • A sharp sealing and scoring knife.

Ingredients
  

  • 1 lb ground beef or pork sausage
  • 1 small onion finely diced
  • 1 cup shredded cheddar cheese
  • 1 cup mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • 1 tube refrigerated biscuit dough or homemade pastry
  • 1 egg for egg wash
  • Optional Add-Ins: diced jalapeños bell peppers, or a spoonful of marinara for dipping

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cook the filling. Brown your ground meat in a skillet with diced onions until it is cooked. Sprinkle with garlic powder, paprika, salt, and pepper. Let it cool slightly.
  • Prepare the dough. Roll the biscuit dough into circles(squares if you prefer).
  • Stuff and seal. Put one spoonful of filling in the middle, sprinkle with both cheeses, and fold the dough over. Crimp the edges with a fork to close.
  • Egg wash. Using a beaten egg brush, brush every pocket with it to get that golden look.
  • Bake. bake on parchment-lined baking sheet, 18 20 minutes or until golden brown.
  • Cool slightly. Allow them a little time to rest and yet bite in (trust me on this one).
