Ingredients
  

  • 12 oz bucatini pasta
  • 8 oz steak ribeye or sirloin
  • 8 oz shrimp peeled and clean
  • 3 tbsp olive oil
  • 3 garlic cloves chopped
  • 2 tbsp Calabrian chili paste
  • 1 cup cherry tomatoes cut in half
  • ½ cup white wine or chicken broth
  • ½ cup Parmesan cheese grated
  • Salt and black pepper
  • Fresh parsley

Instructions
 

  • Boil a pot of salted water. Cook pasta until just firm. Save one cup of pasta water. Drain.
  • Season steak with salt and pepper. Sear in hot oil until brown. Rest, then slice.
  • Cook shrimp in the same pan until pink. Remove.
  • Add garlic and chili paste. Stir until it smells good.
  • Add tomatoes. Cook until soft. Pour in wine. Let it reduce.
  • Put in pasta, Parmesan, and a splash of pasta water. Mix until shiny.
  • Add steak and shrimp. Sprinkle parsley.

Notes

Use only a little chili paste. Too much will burn your mouth. Do not overcook steak or shrimp. They should stay soft. And never skip pasta water—it makes the sauce stick.
