Equipment

  • Small mixing bowl
  • Spoon or silicone spatula
  • Cutting board
  • Sharp knife
  • Add a small whisk (not compulsory, but it will be great to smooth the sauce)
  • Storing container with an airtight lid

Ingredients

  • 1 cup mayonnaise the good stuff- Duke’s or Hellmann's
  • 1/3 cup finely chopped dill pickles
  • 1 Tablespoon dill pickle juice.
  • 2 teaspoons lemon juice fresh preferably
  • 2 teaspoons sugar
  • 1 tablespoon diced onion white or sweet onion
  • 1 tablespoon finely minced onion white or sweet onion
  • Pinch of salt
  • Pinch of black pepper
  • Optional: 1 teaspoon of dill finely chopped, to add more flavor.

Instructions

Prep the pickles and onion

  • Chop your dill pickles and mince the onion until the pieces are small. The less coarse the texture is, the more that the sauce is Captain D.

Mix everything in a bowl

  • Add pickles, pickle juice, lemon juice, sugar, onion, salt, and pepper. Blend using a spoon until all is mixed.

Taste and adjust

  • Want it tangier? Add more lemon.
  • Want it sweeter? Add a tiny pinch of sugar.
  • Want that bolder dill flavor? Sprinkle with fresh dill, chopped.

Chill

  • Refrigerate the sauce at least 30 minutes (an hour is better). Chilling allows the flavors to mix and provides that restaurant-type smoothness and richness.

Serve

  • Use with:
  • fried fish
  • baked cod
  • crab cakes
  • shrimp
  • salmon patties
  • sandwiches
