Measuring cups and spoons.
- 2 cups corn canned, frozen, or fresh roasted
- 8 oz cream cheese softened
- ½ cup mayonnaise
- ½ cup sour cream
- 1 ½ cups shredded cheddar cheese
- 1 cup Monterey Jack cheese
- 1 can 4 oz diced green chiles
- 1 red bell pepper finely diced
- 2 green onions sliced thin
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp chili powder
- Salt and black pepper to taste
- Optional: crispy bacon crumbles fresh cilantro for garnish
Preheat oven to 375°F (190°C).
Prepare the base: In a large bowl, combine cream cheese, mayo and sour cream until there is no lumpiness.
Add flavor: Add in the corn, cheeses, peppers, green chiles and seasonings. Stir well.
Pour into a baking pan and spread out. Sprinkle extra cheese on top.
Bake 25–30 minutes or till hot and bubbling and golden top.
Serve with green onions, bacon, or cilantro. Serve warm with chips.
