Servings 5 half-pint jars
- 2 cups fresh figs about 10–12 medium figs, chopped, or 1 ½ cups dried figs rehydrated
- 2 cups raspberries fresh or frozen
- 1 large orange zest + ½ cup freshly squeezed juice
- 2 tablespoons fresh ginger finely grated
- 4 cups granulated sugar
- 1 packet 1.75 oz fruit pectin
- ½ cup water
Optional Add-ins:
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon or nutmeg
- 1 –2 tablespoons bourbon or brandy
Chop the figs, zest and sweeten the orange, and grate the ginger.
Add figs, raspberries, orange juice, zest, ginger, and a splash of water to a heavy bottomed pot.
Place everything into a light boil and allow the fruits to break down, stirring frequently.
Add sugar and pectin, and mix to avoid lumps. Continue to cook until the jam becomes thick and shiny.
Dot a spoonful on a chilled plate. When it wrinkles, pushing, then it is gotten.
Pour hot jam into sterilized jars and seal them, and let cool until the tops pop.
