Ingredients
  

For the Chicken

  • pounds boneless skinless chicken thighs or breasts
  • cups buttermilk
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Breading

  • cups all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper
  • teaspoons salt
  • ½ teaspoon black pepper

For Frying

  • Neutral oil canola or vegetable

For the Hot Honey

  • ¾ cup honey
  • 1 –2 teaspoons red pepper flakes
  • 1 teaspoon apple cider vinegar

For the Sauce

  • ½ cup mayonnaise
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice

For Assembly

  • 12 slider buns
  • Dill pickle slices
  • Optional: shredded lettuce or coleslaw

Instructions
 

Step 1: Marinate the Chicken

  • Cut chicken into slider-sized pieces. Place in a bowl with buttermilk, salt, and pepper. Cover and refrigerate for at least 30 minutes, up to overnight.
  • This step keeps the chicken tender and juicy.

Step 2: Make the Hot Honey

  • In a small saucepan over low heat, warm the honey and red pepper flakes together for about 5 minutes. Stir gently. Do not boil.
  • Remove from heat and stir in apple cider vinegar. Set aside.

Step 3: Prepare the Breading

  • In a shallow bowl, whisk together flour, cornstarch, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
  • Remove chicken from the buttermilk, letting excess drip off, then coat thoroughly in the flour mixture.

Step 4: Fry the Chicken

  • Heat oil to 350°F in a heavy skillet.
  • Fry chicken in batches, about 3–4 minutes per side, until golden brown and cooked through. Transfer to a wire rack or paper towels.
  • While still hot, drizzle lightly with hot honey.

Step 5: Make the Sauce

  • Mix mayo, honey, Dijon, and lemon juice until smooth. Chill until ready to use.

Step 6: Assemble the Sliders

  • Lightly toast slider buns. Spread sauce on the bottom bun. Add chicken, drizzle more hot honey, top with pickles and optional lettuce. Finish with the top bun.
  • Serve warm.
