Ingredients
  

For the fries:

  • 1 bag frozen french fries or homemade fries
  • 2 tbsp vegetable oil if baking
  • 1 tsp paprika
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • Salt to taste

For the voodoo sauce:

  • 1 cup mayo
  • 1 tbsp Cajun seasoning
  • 1 tbsp hot sauce
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp mustard
  • 1 tsp vinegar apple cider or white
  • 1 tsp sugar
  • Optional: a splash of pickle juice for extra tang

For toppings:

  • 1 cup shredded cheese cheddar, pepper jack, or a mix
  • Sliced jalapenos
  • Chopped green onions
  • Cooked bacon bits
  • Grilled or shredded chicken optional

Instructions
 

  • Preheat your oven or air fryer to 425F.
  • Spread fries on a baking sheet. Drizzle oil, sprinkle paprika, Cajun seasoning, garlic powder, and salt. Toss well.
  • Bake or air fry until golden and crispy.
  • In a bowl, whisk together the mayo, Cajun seasoning, hot sauce, paprika, garlic powder, onion powder, mustard, vinegar, and sugar. Taste and adjust heat or tang.
  • Melt cheese on the hot fries, or warm it slightly on the stove until creamy.
  • Pile the fries onto a plate.
  • Pour the voodoo sauce generously over the top.
  • Add jalapenos, green onions, bacon, or any toppings you love.
  • Serve hot and messy — the only proper way.
