Ingredients
  

  • 1 cup long grain white rice
  • 2 cups water
  • 1 teaspoon salt plus more to taste
  • 1 tablespoon neutral oil canola or vegetable
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lime juice about 1 lime
  • Zest of 1 lime
  • 1/4 cup fresh cilantro finely chopped

Optional additions:

  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions
 

Rinse the rice

  • Place the rice in a fine mesh strainer and rinse under cold water until the water runs mostly clear. This step matters. It removes excess starch and keeps the rice fluffy instead of sticky.

Cook the rice

  • Add the rinsed rice, water, and 1 teaspoon salt to a saucepan. Bring to a boil over medium-high heat.

Simmer and steam

  • Once boiling, reduce heat to low, cover, and simmer for 15 minutes. Do not lift the lid. Let the rice steam and do its thing.

Rest the rice

  • Turn off the heat and let the rice sit, covered, for 5 minutes. This finishes the cooking gently.

Season while warm

  • Fluff the rice with a fork. While it’s still warm, drizzle in the neutral oil and olive oil. Add lime juice, lime zest, and cilantro.

Taste and adjust

  • Taste the rice. Add more salt or lime juice if needed. This is where you make it yours.
