- 1 cup long grain white rice
- 2 cups water
- 1 teaspoon salt plus more to taste
- 1 tablespoon neutral oil canola or vegetable
- 1 tablespoon olive oil
- 2 tablespoons fresh lime juice about 1 lime
- Zest of 1 lime
- 1/4 cup fresh cilantro finely chopped
Optional additions:
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
Simmer and steam
Once boiling, reduce heat to low, cover, and simmer for 15 minutes. Do not lift the lid. Let the rice steam and do its thing.
Season while warm
Fluff the rice with a fork. While it’s still warm, drizzle in the neutral oil and olive oil. Add lime juice, lime zest, and cilantro.
