Ingredients
  

For the donut dough:

  • 2 1/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs room temperature
  • 3/4 cup whole milk
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract

For frying:

  • Vegetable oil or neutral frying oil

Optional toppings:

  • Powdered sugar
  • Cinnamon sugar
  • Simple vanilla glaze

Instructions
 

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and nutmeg until evenly combined.
  • In a separate bowl, whisk the eggs until smooth, then add milk, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and gently stir until just combined. The dough should be soft and slightly sticky.
  • Turn the dough onto a lightly floured surface. Pat it gently to about 1/2-inch thickness.
  • Cut out donuts using a donut cutter and gather scraps carefully to cut more.
  • Heat oil to 350°F in a heavy-bottomed pot.
  • Fry donuts in small batches for about 1 to 1 1/2 minutes per side, until golden brown.
  • Remove with a slotted spoon and drain on a cooling rack lined with paper towels.
