For the donut dough:
- 2 1/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 2 large eggs room temperature
- 3/4 cup whole milk
- 2 tablespoons unsalted butter melted
- 1 teaspoon vanilla extract
For frying:
- Vegetable oil or neutral frying oil
Optional toppings:
- Powdered sugar
- Cinnamon sugar
- Simple vanilla glaze
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and nutmeg until evenly combined.
In a separate bowl, whisk the eggs until smooth, then add milk, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. The dough should be soft and slightly sticky.
Turn the dough onto a lightly floured surface. Pat it gently to about 1/2-inch thickness.
Cut out donuts using a donut cutter and gather scraps carefully to cut more.
Heat oil to 350°F in a heavy-bottomed pot.
Fry donuts in small batches for about 1 to 1 1/2 minutes per side, until golden brown.
Remove with a slotted spoon and drain on a cooling rack lined with paper towels.
