For the Oreo Crust
- 24 Oreo cookies crushed finely
- 5 tbs melted unsalted butter.
- Pinch of salt
For the Ice Cream Filling
- 11/2 quarts 6 cups softened ice cream coffee.
- 1 quart 4 cups chocolate ice cream (swap layer)
For the Fudge Layer
- 1 cup heavy cream
- ¾ cup semisweet chocolate chips
- ¼ cup unsalted butter
- ½ teaspoon vanilla extract
- Pinch of salt
For the Toppings
- Whipped cream store-bought or homemade
- Almonds or pecans oddly toasted
- Chocolate syrup or hot fudge for drizzling
- Shaved chocolate or cocoa powder optional
Step 1: Make the Crust
Break the Oreo cookies into fine crumbs (easy with the help of a food processor). Combine them with melted butter and a sprinkle of salt until they feel like wet sand.
Transfer the mixture to the bottom and a little way up the sides of your springform pan. Freeze in refrigerator 1520 minutes to set.
Step 2: Prepare the Fudge Layer
Heavy cream, butter, and chocolate chips should be cooked in a small saucepan over low heat. Stir until melted and smooth. Add vanilla and salt.
Allow it to cool until it becomes thick but still to be poured out.
Spoon half of this fudge base on top of your frozen crust, and spread it evenly over it. Store in freezer for 15 minutes to freeze.
Step 3: Add the Ice Cream
Scoop softened high-fat coffee ice cream and poured it over the fudge layer. (And with chocolate ice cream, too, another scoop now and then, to make it marbled)
Top smooth and wrap tightly with plastic wrap and freeze for at least 4 hours -even better left overnight.
Step 4: Final Assembly
After the ice cream layer has become solid, pour the rest of the fudge sauce over the top. Return to freezer for 30 more minutes.
Before serving, give much whipped cream, sprinkle toasted nuts, and drizzle with chocolate syrup.
Step 5: Serve & Enjoy
Allow the pie to cool at room temperature for approximately 10 minutes, then cut.
So pick up a large spoon and sink in some chocolatey creamy delight.
