- 6 large eggs
- ½ cup cottage cheese full-fat for creaminess
- ½ cup shredded Monterey Jack cheese
- ¼ cup shredded mozzarella cheese
- ⅓ cup roasted red peppers finely chopped
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ⅛ teaspoon smoked paprika
- ⅛ teaspoon garlic powder
- Optional: pinch of red chili flakes
Step 1: Preheat and Prep
Preheat your oven to 325°F (165°C).
Lightly grease your muffin tin with non-stick spray or butter.
Place the muffin tin inside a larger baking tray—this is for the water bath.
