Introduction

Having never tried one before, I am going to present to you your new guilty pleasure, the Mexi Rolls Recipe. Just envision golden tortillas that are crispy on the outside and filled with melted cheese and tender, cooked meat that has been cooked just long enough to achieve that desirable crunch.

Mexi Rolls are a fun cousin of taquitos. Mexi Rolls are sort of a fun cousin of taquitos. They consist of small flour tortillas filled with ground beef seasoned with cheese, rolled up tightly, and fried until golden brown. 

On the outside, they are crispy, on the inside, warm and cheesy, and they are calling out to be dipped in salsa, queso, or guacamole. What makes this recipe so beautiful is how easy it is to make, with only a few pantry items, and you head towards snack heaven.

The History of my First Mexi Rolls.

The first time I got to have Mexi Rolls was at a nearby Tex-Mex restaurant, where they were being served in a smaller basket with queso on the side. I got one bite, and then I was dead–the brittle crust, the cheese which melts, the small bite of spice… I was sold. 

And my first thought was Why not make these at home? So I did. The initial one was not flawless (one or two bursts in the oil, oops,) but after several attempts, I broke the code. 

This Mexi Rolls Recipe is now something that I can prepare without really having to give it a second thought, and it has always been a success with my friends and family.

Equipment You’ll Need

You do not need an entire ton of fancy stuff to peel this off. Frankly speaking, you need a skillet and some tortillas, and you are halfway there. To simplify it, however, here is what I would suggest:

  • A skillet or frying pan in which to brown the beef.
  • A mixing bowl for the filling.
  • Toothpicks or not to open up the rolls (lifesaver in case you are new to this).
  • A heavy skillet or fryer is needed to achieve that golden crunch.
  • And, there were plenty of paper towels to catch the additional oil.

Even better, if you have an air fryer. These rolls are amazingly great with much less oil.

Ingredients

This is what you will require in this Mexi Rolls Recipe:

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup shredded cheddar cheese (or a mix with Monterey Jack)
  • 10–12 small flour tortillas
  • Oil for frying (vegetable or canola)
  • Optional: diced jalapeños, black beans, or corn

Instructions

Step 1

Cook the beef. Cook it in a skillet on medium heat and remove the excess grease.

Step 2

Season it. Add taco seasoning and only a drop of water, and simmer until it smells wonderful.

Step 3

Get cheesy. Add in your shredded cheese and allow it to melt directly into the meat.

Step 4

Roll ‘em up. Put a scoop of filling into each tortilla, roll, and secure with a toothpick, as necessary.

Step 5

Fry ‘em. Heat your oil to approximately 350°F and fry until golden and crispy, turning as necessary.

Step 6

Serve hot. Place them on paper towels and wait a few more minutes, and then dive right in and continue to feast on them when they are still sizzling.

What I have found after making these far too many times is as follows:

  • Roll tight–all tight–or the stuff will creep out.
  • Don’t overcrowd your skillet. Give those rolls some space.
  • Shred your own cheese. Believe me, it has melted much better.
  • Want them lighter? Oil them and put them in the air fryer at 375°F for 8 to 10 minutes.

Well, I will be frank, there are recipes that I prepare once and never see again, and recipes that I prepare and play with endlessly. Why? It is comfort food without the calories. 

The tortillas crunch well, the filling is cheesy, with a full flavor, and they are as good with queso as they are with salsa or guac. It is one of those crowd pleasers.

Serving and Pairing Ideas

Mexi Rolls can be eaten on their own (I have done it more than once), but they are perfect with the right sides and dips:

  • Traditional salsa, guacamole, or cheese to dip.
  • One side of Mexican rice or refried beans.
  • Delivered on a platter with nachos, quesadillas, or wings on game day.

In essence, when it is Tex-Mex, it will get along with these rolls.
